Baked, Not Fried

These “Truly Handmade Whole Wheat Flour Tortillas” from Trader Joes are so great!

Lately, in addition to making sandwich wraps with ‘em, I’ve been making them into a healthier version of tortilla chips, which are traditionally fried. I just pop them into the toaster over at 325 degrees for 15 minutes, flipping them halfway through. No extra seasoning necessary!

Even Shaun, who was skeptical at first, has found an affinity for them. Now, I always make enough for leftovers which I store in a large glass jar. Not only does it provide airtight storage, but it looks good, too!

Last night I had some of these guys paired with

  • veggies (red bell peppers, baby carrots, cucumber, celery, baked sweet potatoes)
  • dips (garlic hummus and light ranch dressing)
  • raw almonds
  • an oven roasted chicken drumstick!!
  • a glass a pinot noir
  • …and there may have been a few spoonfuls of peanut butter and Nutella in the mix for dessert ;)

Who’s ready for the weekend? This girl is! I am hosting a brunch, board games, and clothing swap get together at my place with a few girlfriends on Sunday. Hoping to score big — at Scrabble! Although, a new outfit or handbag would be nice, too. ;)
