Sunday afternoon we gathered at Erik’s and Amanda’s home (Shaun’s brother and sister in law) to celebrate his dad’s birthday. In honor of the occasion, we had another epic day of cooking and eating that featured Shaun’s homemade pasta-making skills! (Remember the Christmas ravioli?!)

Shaun and his niece Maddy got right to work making the spinach lasagna noodles from scratch.

While the rest of us snacked on some really excellent (homemade!) dips, cheese, fruits, and veggies!

After a few HOURS, Shaun’s mom and I gave the pasta makers a break and took over.

While the lasagna baked, I got pampered

And then it was time to dig in!

OH.EM.GEE. This lasagna was SO outstanding, I ate my entire piece and barely had room for carrot cake. Somehow I managed
