Spicy Edamame

Friday’s workout – nada

If you’re on Facebook with me, you know I had epic plans for Friday night that included a 1.6 lb steak and cheesy ‘put-back’ aka twice-baked potatoes. However, Shrek, who was looking forward to this meal just as much if not more than I, unintentionally thwarted our plans when he sweetly surprised me at work with lamb pitas for lunch on Friday.

See, the problem is that I LOVE LAMB PITAS and my body was obviously craving red meat, so I happily scarfed down the ENTIRE plate. Plus an order of zucchini fries (not pictured). Usually this doesn’t pose a problem when I’m running 6+ miles a day. It all gets burned off and I’m hungry for a snack and dinner a few hours later. However, since I’ve been resting my knee I’ve noticed a considerable decline in my metabolism; food doesn’t move through me nearly as quickly and so when dinnertime rolled around, I wasn’t hungry. AT ALL. :( That 1.6 pound steak would have to wait another night.

Instead, to avoid the cruh-azy Saturday crowds at Costco we ended up going Friday night to pick up the necessities. You know, like socks. And a Costco-size handle of vodka:

Which we immediately tried to prepare and serve the way our favorite Japanese restaurant does:

I have no idea if this is how Mizu prepares it, but we were inspired.

Instructions:

  • Toss edamame into a pan of warm olive oil on stove top.
  • Add garlic, sea salt, and fresh cracked pepper to taste.
I was also insanely exhausted from too little sleep the past work week — all the more reason to postpone our steak dinner. I wanted to thoroughly enjoy it, after all! I think I ended up conking out at something silly like 9 pm, way earlier than I go to bed during the work week. I gotta say, it was delicious getting 10+ hours of sleep!
