Lunch Lately : Watermelon Tomato Feta Salad

Wednesday’s workout – 5.5 mile run outside followed by 1 hour of tennis with Sonja!

I have been addicted to this watermelon-tomato-feta salad ever since Gina made it for our Chef’s night a few weekends ago! Looking back, I’m fairly certain it’s accompanied my lunch every day since and today is no exception.

Gina’s (“So Easy!”) Watermelon Tomato Feta Salad Recipe

  • Same parts fresh sweet seedless watermelon & tomatoes cut into bite size chunks
  • Creamy basalmic dressing. (Recipe below)
  • Crumble Feta Cheese over top

Creamy Balsamic Dressing:

  • 1 cup mayonnaise (you can substitute plain yogurt)
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 clove garlic, minced
  • 1 1/2 teaspoons chopped dried oregano
  • 1 teaspoon chopped dried basil
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • (I”m weird and add Grey Poupon Mustard to mine)

Obviously, it doesn’t comprise an entire meal (at least for me), so I pair it with a protein-packed sandwich of some sort. Lately I’ve been wrapping turkey slices in Trader Joe’s Spicy Tortillas and dipping it in spicy jalapeno hummus. Super healthy, right?! So everything’s followed by a few squares of these bad boys ;)

  1. So I just picked up the caramel chocolate bar and am currently hating/loving you for introducing it to me. I neither confirm nor deny that I might have eaten the entire thing in one sitting. There might be a plan to go back to trader joes (very soon) and stock up on these bad boys :)
