Shrek and I had quite the Italian feast tonight! Prosciutto melone? Check. Spicy spinach pizzette? Check. Insalata caprese? Check. Pasta al tonno? Check check check!

I got Shrek hooked on a little trick I picked up in college while studying abroad in Italy. I swear, the Italian bachelors do this when nonna isn’t around to cook for them!! …Canned tuna + red sauce = fab n’ fast semi-homemade goodness. Shrek takes it to a whole ‘nother level by adding shallots and garlic-stuffed olives. It’s a simple savory way to sneak some healthy protein into an otherwise vegetarian meal. And it’s quick, too! The entire meal took under 15 minutes including boiling water for the pasta! The pizzas are just those little guys from Trader Joes I’ve mentioned before. Shrek just added cherry tomatoes, shallots, garlic, parmesan, and more cheese… which to be honest is a little much for me. Sssshhh — I actually prefer them just as they are but since I had one for lunch, those were all his. ![]()
P.S. I get those chopped basil cubes from Trader Joes’ freezer section. They are so handy for cooking!
