A sneaky yet scrumptious way to get your veggies and wheat germ in?



I baked a huge batch of carrot/zucchini bread last night and it turned out AMAZING! It’s semi-healthy, too, considering all the veggies I added + substituting applesauce in for oil.

Love how you can see flecks of zucchini and carrot in it! Also, the combination of sugar, vanilla, cinnamon, cloves, and nutmeg smell AMAZING as it bakes.

Here’s how to make your own:

Preheat oven to 375.

Grease and flour a baking pan. I used a 9 x 13 in., but you can also use  2 loaf pans. Just adjust baking time accordingly  per instructions below.

Beat smooth

3 eggs
1 cup sugar
1 cup brown sugar
1 cup oil OR applesauce
3 tsp. vanilla

Stir in/Add:
2 medium/large shredded zucchinis*
2 medium/large shredded carrots*
¼ cup wheat germ

*A food processor makes shredding a breeze!

You can also see from the photos that I used two handfuls of baby carrots instead of 2 large carrots.

Sift/Stir/Add:
2 ½ cups flour (you can use half wheat flour)
2 tsp. baking soda
½ tsp. baking powder
1 ½ tsp. salt
1 tsp. cinnamon
1 tsp. cloves
1 tsp. ginger
1 tsp. nutmeg

All ingredients should be mixed well and poured into a baking pan. Cook two loaves approximately 30-35 mins or a larger pan like min 40-45 minutes. Check doneness with a toothpick in the middle. If it comes out clean, it’s ready! Cool and enjoy!

FYI I cut my large “sheet” of bread into 3 “loaves” to share :)
