Yesterday, our friends A&W (aka the couple we went to Napa with here) invited us to grab dinner with them after the guys played a round of golf. Since I’d just gone grocery shopping on Monday, Shrek and I decided to invite them over for an impromptu dinner party rather than going out… The benefits of having a well-stocked fridge!
A’s a vegetarian and I was more than happy to make her my salad of the moment. I have approximately 2-week love affairs with certain salad combinations where I eat them for lunch day after day. Then I get bored and move onto the latest, greatest combination. For awhile it was mangoes, edamame, and a honey mustard vinaigrette. This week I’m topping my field greens (baby lettuce, arugula, and spinach) with fresh strawberries, cherry tomatoes, mozzarella, olive oil and balsamic vinegar. Yup, it’s so good I had it for lunch AND dinner yesterday! The pizza’s so good I had it twice, too! Better yet? It’s so easy to make! It’s pre-cooked and only takes 3 minutes to heat in the toaster oven.
Both got two thumbs up from A&W. W even said he’s “not a salad guy” but this one was excellent.
Instead of pizza with their salads, the guys had tacos. Shrek and I bought a $20 (i.e. GINORMOUS) Santa Maria tri-tip steak from Costco and cooked it up Sunday night. While it was too salty to eat as-is (boo), it worked brilliantly as carne asada for tacos! Shrek sliced and diced the remaining steak and threw it on the grill with cilantro and onions. A&W picked up some salsa, guac, and chips and we had ourselves a little fiesta. (Taco Tuesday, anyone?) Aside from the company, the best part? Everything took 5 minutes tops to prepare!
