After a 5-day hiatus, it was back to the grind today. For lunch I was inspired by one of my favorite healthy-living bloggers to create a hummus sandwich. Of course I put my own spin on it. My meals require quite a bit more heartiness and protein, so I added roast turkey and pepper jack cheese.
It may look a little sad, but the execution tasted so delicious I shared another with Shrek as a snack when I got home from the gym while he made dinner. (Lean white turkey burgers and sauteed mushrooms. YUM!)
Did I mention I’m officially IN for the Big Sur Marathon this May? I’m captaining a relay team and running the most brutal part… a 7 mile run with a 2 mile steady climb. Hopefully the gorgeous scenery will distract me
and my treadmill workouts will pay off. I was flirting with the idea of signing up for the Napa Marathon in March, but think it’d be best to take it slow and steady and just go wine tasting instead and run it in 2012 instead. Therefore, my running goals for the next year spread into 2012: complete the Big Sur Marathon Relay in May, the Big Sur Half-Marathon in November, and hopefully build up to the 2012 Napa Marathon which is over a year away. Who else is in? At least to come cheer me on and go wine tasting?



Great minds (stomachs?) work alike. I’ve also started using hummus as a condiment on sandwiches–good addition……………..
