Brrr it’s cold outside and my usual bowl of Kashi’s Strawberry Fields and 2 Zebra Cookies with milk for breakfast just isn’t cutting it. This morning I decided I wanted something a little heartier to stoke my internal furnace and made myself an omelet and tots when I got back from the gym, something I usually only whip up for brunch on the weekends.
As you can see, my focus was more on the tots this morning.
Omelet
- 2 eggs
- 1 green onion
- 1 small tomato
- 1 tsp cream cheese
- salt and pepper to taste
- 1 Tbsp olive oil
Instructions
- Heat frying pan over medium heat. Once warm to touch, coat pan with olive oil.
- While waiting for pan to heat, crack two eggs into a bowl. Add washed and diced green onion (I use kitchen shears) to eggs.
- Beat well and add to pan. Cook to your liking — scrambled or whatnot.
- I like adding a dab of cream cheese and diced tomatoes at the very end to add a little depth to my meal. Salt and pepper to taste, too.
Sorry to disappoint you that my omelet isn’t super healthy. I’ve never really gotten on the egg white bandwagon. Or off eating cookies with breakfast (a trait I “inherited” from my dad!) …I may have had two while I waited for my eggs to cook!

I LOVE tater tots, now I definitely want to make some tomorrow morning.
