As promised, here is my friend’s fantastic 3 Pepper Sausage Pasta recipe. It’s SO easy to make and SO delish that Shrek and I had it two nights in a row. And you know what? As leftovers it was even better the second night! Love meals like that!
Ingredients
Olive oil
1 package Italian (spicy) sausage
six garlic cloves (minced)
Bell peppers (green, orange, red)
one onion (sliced or diced)
One jar of sweet basil or garlic and basil sauce
One fresh tomato or one can diced tomatoes
Fresh basil
package of linguine
Black pepper
Salt optional (may not need salt if sausage has plenty of flavor…taste sauce after sausage has fully cooked).
Do it yourself:
Cook the sausage, garlic, and onions with olive oil in a large pan. If you want, you can halve the sausages or leave them whole.
When fully cooked add sauce and diced tomato over medium heat.
Once it starts to boil, set to low heat and add chopped bell peppers and a few basil leaves.
Once the veggies are cooked turn off heat and add more basil for taste and a shake of pepper.
Cook pasta according to directions on box. I like Barilla linguine. While living in Italy this is what the Italians used so hey, it’s good enough for me! Drain and add sauce.
