Let’s be real. I love me my pork chops and filet mignon and McNuggets. Dinner at my vegetarian-friend’s home Saturday night, however, jump-started a whirlwind love affair with veggies that has no end in sight. I even passed on Shrek’s chicken tonight in favor of a sauteed portobello mushroom. Yeah, they’re that good.
My friend and her husband served a beautiful, simple spread of sauteed and grilled vegetables that had me savoring each bite and thinking maybe there’s something to this vegetarian-thing after all… Baked cherry tomatoes stuffed with mozzarella, topped with basil. Sauteed portobello mushrooms. Baby asparagus. Broccoli florets. Heaven. Each was complemented with olive oil and seasonings that highlighted each respective green’s essential flavor.
The following day I immediately ran to the store to stock up. I felt so healthy staying to the perimeter of the grocery store for fruits, veggies, and dairy only. The only problem I encountered was trying to find space for it all in my fridge. I eventually found it after emoving a few bottles of Chardonnay and beer. Yeah, that definitely said something to me about my current diet. Here’s a little sampler of what Shrek and I have been grilling up over the past few days.

Sounds wonderful and ever more healthy. I love dinners of veggies and salads and perhaps an omelet. However, I still really enjoy steak, hamburger and chicken (not to mention turkey).. Had a decent piece of salmon last night, but I think I’m basically a carnivore…………..
